    I wanted burgers to be a bit healthier so substituted chicken mince and lots of vegetables in the patty itself. Enjoy!

    Makes: 10 burgers

    • 1 onion, finely diced
    • 2 teaspoons garlic, finely diced
    • 2 carrots, grated
    • 1 small zucchini, grated
    • 2 tablespoons peas
    • 1 tomato, diced
    • 1 chicken stock cube
    • 1 kg chicken mince
    • 1 egg
    • 60g breadcrumbs
    • Herbes de Provence or mixed herbs
    • salt and pepper, to taste
    • oil, for frying
    • 10 hamburger buns
    • To garnish
    • lettuce leaves
    • tomato slices
    • mustard and tomato sauce

    Preparation:30min  ›  Cook:15min  ›  Ready in:45min 

    1. Oil a frypan and saute the onions until translucent. Add garlic and cook 30 seconds, then add the carrot, zucchini, peas and tomato. Sprinkle over the crumbled stock cube and cook until soft. Remove from frypan and let cool.
    2. In a mixing bowl, combine mince, cooked vegetables, egg and breadcrumbs. Season to taste. Mix well and form 10 hamburger patties.
    3. Preheat the barbecue to medium heat and oil the grate. Cook burgers 5 minutes a side or to preferred doneness. Serve on buns with the garnishes.
