Oil a frypan and saute the onions until translucent. Add garlic and cook 30 seconds, then add the carrot, zucchini, peas and tomato. Sprinkle over the crumbled stock cube and cook until soft. Remove from frypan and let cool.
In a mixing bowl, combine mince, cooked vegetables, egg and breadcrumbs. Season to taste. Mix well and form 10 hamburger patties.
Preheat the barbecue to medium heat and oil the grate. Cook burgers 5 minutes a side or to preferred doneness. Serve on buns with the garnishes.
