Fried Rice with Broccoli and Chicken

    When I feel like an easy lunch, chicken fried rice is the go. Broccoli adds a bit of crunch and some more nutrients.

    Serves: 2 

    • 200g rice
    • olive oil, as needed
    • 1/2 white onion, diced
    • 1/2 clove garlic, diced
    • 150g chicken breast, diced
    • 1 tablespoon soy sauce
    • pinch ground ginger
    • pinch cayenne pepper
    • 1 egg
    • salt and pepper, to taste
    • 1/2 head broccoli, cut into florets

    1. Cook the rice according to packet instructions. Drain and set aside.
    2. Meanwhile, heat the olive oil in a wok and cook the onion and garlic until just soft. Add the chicken with a dash of soy sauce, the ground ginger and cayenne pepper. Stir fry.
    3. Whisk the egg in a bowl with a pinch of salt and pepper.
    4. When the chicken is almost done, add the broccoli. After a few minutes, add the cooked rice, beaten egg and remaining soy sauce. Stir until the egg is set and serve at once.
