Microwave Chicken with Apples

    This is a microwave version of a classic from Northern France. It is very rich with butter and cream and quite elegant!

    Serves: 8 

    • 3 tablespoons butter
    • 1 kg Granny Smith apples, peeled and diced
    • 2 1/2 tablespoons cornflour
    • 1/3 cup apple juice
    • 1 cup chicken stock
    • 1/2 cup thickened cream
    • salt and pepper, to taste
    • pinch cayenne
    • 4 chicken breasts, skin removed and halved

    1. Melt the butter in a large microwave safe dish. Add apples and toss to coat with butter. Microwave, uncovered, for 5 minutes at full power.
    2. Stir the cornflour into the apple juice and add to the apples. Add stock, cream, salt and pepper and cayenne. Cook, uncovered, 8 more minutes.
    3. Add the chicken breasts and nestle them into the sauce. Cover with microwave safe plastic wrap and cook at full power 8 more minutes. Serve!
