Microwave Coconut Chicken Curry

    The microwave makes chicken curry super fast. This recipe uses paw paw (papaya) for a touch of lovely sweetness.

    Serves: 4 

    • 3 tablespoons butter (unsalted)
    • 2 yellow onions, roughly diced
    • 1 paw paw, roughly diced
    • 2 tablespoons curry powder
    • 2 chicken breasts, skinned and diced
    • 1 tablespoon milk
    • 2 tablespoons chicken stock
    • 3 teaspoons salt, or to taste
    • 2 teaspoons lemon juice
    • 1/4 cup shredded unsweetened coconut

    1. Put the butter in a 2 litre microwave safe dish and melt it for 3 minutes.
    2. Remove it from the microwave, add the onions, paw paw and curry powder and stir well. Cook at 100% for 6 minutes.
    3. Add the chicken, milk and stock and stir. Cover with microwave safe plastic wrap. Cook at 100% for 6 minutes, stirring one halfway through.
    4. Remove from microwave, stir in salt and lemon juice and sprinkle with coconut.
