This is my quick chicken couscous lunch recipe for one. You can add other vegies if you prefer, this is just one example.


Serves: 1 

  • 1 chicken breast fillet
  • salt and pepper, to taste
  • 1 tablespoon honey
  • 90g couscous
  • 1/2 red capsicum, diced
  • 1 stalk celery, diced
  • 1-2 tablespoons fresh basil, chopped
  • 50g feta cheese
  • 2 teaspoons olive oil

Preparation:10min  ›  Cook:30min  ›  Ready in:40min 

  1. Preheat the oven to 180 degrees C.
  2. Rub the chicken breast with salt, pepper and honey and place on a baking tray.
  3. Bake chicken in the preheated oven until no longer pink inside, about 30-40 minutes.
  4. Cook the couscous according to packet instructions. When chicken is done, cut into bite size pieces and add to the couscous along with the capsicum, celery, basil and feta.
  5. Drizzle over the olive oil and toss. Serve!
