Banana Self Saucing Pudding

What to do with those almost dead bananas? Make a pudding. This is divine. Banana cake and a scrumptious sauce. How much can YOU eat?

Serves: 6 

  • Cake
  • 3 cups self raising flour
  • 2 teaspoons bicarb soda
  • 1 1/2 cups sugar
  • 6 bananas, mashed
  • 1 cup canola oil
  • 4 eggs
  • Sauce
  • 1 1/2 cups brown sugar, packed
  • 2 teaspoons cornflour
  • 3 cups boiling water
  • 1 cup golden syrup

Preparation:15min  ›  Cook:40min  ›  Ready in:55min 

  1. Preheat oven to 180 degrees C. Lightly grease large baking dish.
  2. In a bowl, mix the flour, sugar and bicarb soda.
  3. In a medium bowl, mix the bananas, oil and eggs.
  4. Add the banana mixture to the flour mix and stir until well combined. Spoon into prepared baking dish.
  5. Sauce: Mix the brown sugar and the cornflour together.
  6. Sprinkle evenly over the top of the cake mix
  7. Mix the boiling water and the golden syrup together and carefully pour over top of the cake/sugar mix.
  8. Cook approx 40 minutes until nicely brown and a skewer comes out clean.


This is a big pudding so you may want to halve the ingredients.
