    I was looking for a stronger type pesto sauce for my spaghetti squash and created this, but is does work well on normal spaghetti too. It also is a great sauce on chicken and fish with its Asian flavours.

    Ingredients
    Serves: 2 

    • 4 cloves garlic, diced
    • 1 tablespoon diced ginger
    • 1 cup fresh mint, chopped
    • 1 cup coriander, chopped
    • 1/3 cup cashews
    • 3 tablespoons almond oil
    • salt, to taste

    Directions
    Preparation:10min  ›  Ready in:10min 

    1. Process garlic in a food processor until finely minced, then add the ginger, mint, coriander, cashews, almond oil then season with salt.
    2. Place in a glass bowl and leave to mature while preparing the pasta or spaghetti squash.
