Bolognese Sauce: Heat a large saucepan then add a dash of oil and the mince. Stir until almost brown then add the onion and garlic. When the onion starts to soften add the celery and capsicum. Stir until these vegetables are almost cooked.
Add the jar of pasta sauce, stir in then let simmer as you cook your pasta of choice. If the jar doesn't seem to have enough moisture rinse the jar out with some water and tip into the sauce. Let simmer until the squash is ready.
Spaghetti Squash: Cut the squash in half then rub with the oil. Place in an oven preheated to 180 degrees C then cook until the squash is soft and splits into spaghetti strings; about 45 minutes.
To Serve: place the spaghetti squash in a pasta bowl, then top with the bolognese sauce and finally sprinkle with the grated cheese.
