Peel and dice the apples into about 1cm cubes making sure all skin and seeds are removed.
Put a small saucepan on a medium heat, add the water. When the water is boiling add all the apples, lower the heat and put on the lid.
When the apples are very soft add the sugar and cinnamon. Stir the apples briskly with a wooden spoon pushing any lumps against the side of the saucepan. Continue stirring and cooking until a smooth applesauce is reached.
