Combine the shallot and lime juice in a medium sized bowl. Let stand about 5 minutes. (The acid in the lime juice, ensures that the shallot tastes milder.)
Add the avocado, capsicum, grapes and coriander then season with salt and pepper. Cover and leave at room temperature for about 15 minutes.
In the meantime add some oil to a frypan and fry the chicken on all sides. Turn the temperature down and add the chicken seasoning to the meat then continue to cook, stirring frequently for a few minutes until the chicken is no longer pink inside. Remove the frypan from the heat.
Preheat the grill. Halve the bagels and place cut side up on a baking tray. Place under the grill and toast until golden brown.
Spread the toasted bagel with cream cheese. Evenly distribute the chicken on the four halves then sprinkle with grated cheese. Slide back under the grill until the cheese is melted.
Add the avocado mixture on top then serve immediately.
