Prawn and Chicken Open Sandwich

I had some frozen prawns and some chicken left over from the day before. I discovered that these ingredients harmonize wonderfully.


Serves: 1 

  • 1 tablespoon olive oil
  • 2 cloves garlic, thinly sliced
  • 1/2 roasted chicken breast, diced
  • 100g prawns, thawed
  • salt and pepper, to taste
  • 1 tablespoon fresh parsley, chopped
  • 2 slices white bread
  • 1 tablespoon grated Parmesan

  1. Heat the olive oil in a frypan and sauté garlic over medium heat until fragrant. Add the chicken and prawns then fry for a few minutes. Season with salt and pepper. Stir in parsley.
  2. Toast the white bread.
  3. Serve the chicken mixture on top of the toast. Sprinkle with Parmesan.
