Chicken, Zuchinni and Mushroom Stew

    A quick meal with chicken, zucchini and mushrooms. I cook this often during the week if I do not have much time. Generally I serve with noodles and salad.

    Serves: 2 

    • 1 tablespoon butter
    • 2 chicken breasts, diced or sliced
    • salt and pepper, to taste
    • 1 tablespoon olive oil
    • 4 spring onions, sliced
    • 2-3 zucchini, halved lengthwise and cut into 2cm thick slices
    • 8 large mushrooms, sliced
    • 1-2 tablespoons cornflour
    • 200ml cream
    • parsley, finely diced

    1. Heat butter in a frypan and fry the chicken in it stirring frequently. Season with salt and pepper then remove from the frypan and keep warm.
    2. In the same frypan, heat olive oil and fry the spring onions until soft. Add the zucchini slices and allow to cook for 5 minutes while stirring. Add the mushroom slices fry briefly.
    3. Return the seared chicken to the fried vegetables then dust with the flour. While stirring add the cream. Cook for a few more minutes then serve with a sprinkle of the parsley.

    I’m a beginner when it comes to cooking but I found this recipe and made it with some easy. Though I did overcook the zucchini and undercooked the mushrooms yet the recipe still turned out fantastic!     Quick easy meal. I season the chicken with Yep seasoning, (a mixture of salt pepper and seasonings, super delicious!). It is very forgiving on the amount of ingredients one uses: In the past I have doubled the amount of chicken or reduced the amount of zucchini. I have also used yellow squash and three different kinds of mushrooms. Certainly one of the tastiest and easiest dishes one can find on allrecipes. Experiment and have fun! I serve it over rice. I also like to cook the rice in a mixture of water and chicken broth for extra flavor.
