Chicken, Zuchinni and Mushroom Stew

    25 minutes

A quick meal with chicken, zucchini and mushrooms. I cook this often during the week if I do not have much time. Generally I serve with noodles and salad.

Be the first to make this!

    • 2 chicken breasts, diced or sliced
    • salt and pepper, to taste
    • 1 tablespoon olive oil
    • 4 spring onions, sliced
    • 2-3 zucchini, halved lengthwise and cut into 2cm thick slices
    • 8 large mushrooms, sliced
    • 1-2 tablespoons cornflour
    • 200ml cream
    • parsley, finely diced

    1. Heat butter in a frypan and fry the chicken in it stirring frequently. Season with salt and pepper then remove from the frypan and keep warm.
    2. In the same frypan, heat olive oil and fry the spring onions until soft. Add the zucchini slices and allow to cook for 5 minutes while stirring. Add the mushroom slices fry briefly.
    3. Return the seared chicken to the fried vegetables then dust with the flour. While stirring add the cream. Cook for a few more minutes then serve with a sprinkle of the parsley.

Love! Love! Love! It Came out awesome... I sprinkled green onions on the top just for presentation.  -  22 Jun 2018  (Review from Allrecipes USA and Canada)

Yummy recipe. My husband went back for more! We served it over bow tie pasta. I didn’t have zucchini, but I had green bell peppers. That, combined with Tony Chachare’s in the sauce was a nice Cajun-ish twist on the recipe. Also used halfened chicken breasts rather than cubed chicken pieces. I will definitely be adding this to my recipe repertoire!  -  12 Jun 2018  (Review from Allrecipes USA and Canada)
