Pink Velvet Birthday Cupcakes

With so many red velvet cakes it was a matter of time before getting pink ones, but they are great for girls birthdays, baby parties and breast cancer events.

Serves: 12 

  • 2 1/2 cups plain flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/4 cups caster sugar
  • 1 cup buttermilk
  • 230g butter
  • 3 large eggs
  • 1 teaspoon vanilla essence
  • 1/4 teaspoon pink food colouring or gel

  1. Preheat the oven to 180 degrees C. Prepare one muffin tray with 12 to 16 cups.
  2. Sift flour, baking powder, baking soda and salt into a medium bowl.
  3. Use a standing or hand held mixer on medium speed to cream butter and sugar until light and fluffy, then beat in the food colouring.
  4. Add the eggs one at a time to the butter mixture, not adding the next until the last is fully combined. Add vanilla to the egg mixture and combine.
  5. Alternate add buttermilk and flour mixture to the egg mixture, fully combining after each edition.
  6. Spoon cupcake batter to fill each cup 2/3 of the way full. Bake for 20-25 minutes. When cooked cool on a rack then decorate as desired.
