Bara Brith

    Bara Brith is the traditional name for a Welsh tea cake. Delicious and has no butter or milk and keeps for ages.

    Makes: 1 tea cake

    • 340g dried mixed fruit
    • 225g brown sugar
    • 300ml warm black tea
    • 1 teaspoon mixed spice
    • 285g self raising flour
    • 1 egg, beaten

    1. In a large bowl soak the fruit and sugar in strained tea and leave overnight.
    2. Next day, preheat the oven to 170 degrees C. Line a 900g loaf tin with baking paper.
    3. Mix the remaining ingredients into the fruit mixture and beat well.
    4. Pour the mixture into the prepared loaf tin and bake 1 to 1 1/2 hours or until a skewer inserted into the middle comes out clean.


    When I make this I find it is dry so I add an extra 150ml of tea.
