Bara Brith is the traditional name for a Welsh tea cake. Delicious and has no butter or milk and keeps for ages.
Makes: 1 tea cake
340g dried mixed fruit
225g brown sugar
300ml warm black tea
1 teaspoon mixed spice
285g self raising flour
1 egg, beaten

- In a large bowl soak the fruit and sugar in strained tea and leave overnight.
- Next day, preheat the oven to 170 degrees C. Line a 900g loaf tin with baking paper.
- Mix the remaining ingredients into the fruit mixture and beat well.
- Pour the mixture into the prepared loaf tin and bake 1 to 1 1/2 hours or until a skewer inserted into the middle comes out clean.
When I make this I find it is dry so I add an extra 150ml of tea.
