Melt the chocolate and cocoa with the butter in a large microwave safe bowl on high for 2 minutes or until the butter is melted; stir until all the chocolate is melted.
Stir in one of following: instant coffee/ orange essence/ coconut essence. Add the sugar, stir, then the eggs and vanilla, stir again.
Add flour; stir until just blended. If using walnuts, sprinkle nuts over the top: they give much more flavor this way because they toast during baking.
Pour into prepared pan. Bake for about 38-40 minutes. Do not over bake. The edges of the brownies should be pulling away from the side of the pan, but that's it. Remove from the oven. Don't bother with a tester, because it will come out coated in batter, even though they are cooked after this amount of time.
