Fudgy, Rich and Moist Brownies

These brownies can be flavoured with instant coffee, orange or coconut essence for variety. Coconut is my favourite. I have made this recipe at least a dozen times and it always comes out great.

Serves: 8 

  • 200g dark chocolate
  • 1 tablespoon cocoa powder (if you don't have it you can just add extra chocolate)
  • 3/4 cup (190g) butter or margarine (if using unsalted then you will need to add a pinch of salt)
  • 3 teaspoons instant coffee OR 1 teaspoon of orange essence OR one teaspoon of coconut essence
  • 2 cups sugar
  • 3 eggs
  • 1 teaspoon vanilla
  • 1 cup plain flour (wholemeal flour is fine too)
  • 1 cup chopped walnuts (optional)

  1. Preheat oven to 165 degrees C. Grease a 30cm pan.
  2. Melt the chocolate and cocoa with the butter in a large microwave safe bowl on high for 2 minutes or until the butter is melted; stir until all the chocolate is melted.
  3. Stir in one of following: instant coffee/ orange essence/ coconut essence. Add the sugar, stir, then the eggs and vanilla, stir again.
  4. Add flour; stir until just blended. If using walnuts, sprinkle nuts over the top: they give much more flavor this way because they toast during baking.
  5. Pour into prepared pan. Bake for about 38-40 minutes. Do not over bake. The edges of the brownies should be pulling away from the side of the pan, but that's it. Remove from the oven. Don't bother with a tester, because it will come out coated in batter, even though they are cooked after this amount of time.
