    This is a nice and inexpensive dinner made from cupboard ingredients. Serve with salad and maybe some garlic bread.

    Serves: 4 

    • 1 teaspoon butter
    • 150g mushrooms, sliced
    • 1 onion, finely diced
    • 1 tablespoon plain flour
    • 300ml milk
    • 150 frozen peas and sweetcorn
    • 1 (200g) tin tuna, drained
    • 100g cheese, grated
    • 250g small pasta, cooked and drained

    1. Preheat the oven to 200 degrees C.
    2. In a saucepan, melt the butter and gently fry the mushrooms and onion. Gradually stir in the flour and cook 1 minute.
    3. Slowly stir in the milk then add the peas and sweetcorn. Simmer a few minutes, stirring, until thickened.
    4. Stir in the tuna and half the cheese. Mix the sauce into the pasta and transfer to an oven proof dish. Top with remaining cheese.
    5. Bake 20-30 minutes, until top is golden.
