    "Just like the real thing" is the way my daughter describes it.

    Ingredients
    Serves: 6 

    • 1 packet chocolate ripple biscuits, finely crushed
    • 125g butter, melted
    • 4 cups dessicated coconut
    • 1 tin condensed milk
    • 200g glace cherries, quartered
    • 1 teaspoon pink food colouring (more or less depending on what you like)
    • 125g copha, melted
    • Topping
    • 200g dark cooking chocolate
    • 30g copha

    Directions

    1. Line a 9 x 13" (23x33cm) dish with baking paper.
    2. Mix crushed biscuits and melted butter together and press into bottom of dish. Refrigerate while making filling.
    3. In a large bowl, mix coconut, condensed milk, cherries, food colouring and copha together. Stir until well combined and you have the desired colour. Spread evenly over biscuit base.
    4. For topping, melt cooking chocolate and copha together in a heatproof bowl over a pot of boiling water.
    5. Spread chocolate over filling. Refrigerate until set.
