Tagliatelle Primavera

    Don't think adding lettuce to pasta is weird, it's a great technique and adds a special flavour. Garnish this recipe with Parmesan and parsley if desired.

    Serves: 4 

    • 200g snow peas, trimmed and stringed
    • 150g green beans, cut in 3cm lengths
    • 1 carrot, julienned
    • 300g tagliatelle
    • 2 tablespoons butter
    • 1/4 cup olive oil
    • 1 red capsicum, diced
    • 4 lettuce leaves, shredded
    • salt, to taste

    1. Bring a pot of salted water to a boil and add the snow peas, beans and carrot. Boil a couple of minutes then drain and rinse with cold water to stop the cooking process.
    2. Cook the tagliatelle in boiling salted water until al dente.
    3. While the tagliatelle is cooking, melt the butter with the oil in a frypan over medium heat. Add the capsicum and cook 2 minutes. Add the drained vegetables and toss well until they hot.
    4. Drain the pasta and place in a serving bowl then add the vegetables and shredded lettuce. Toss until lettuce is wilted. Add salt to taste and serve.
