Don't think adding lettuce to pasta is weird, it's a great technique and adds a special flavour. Garnish this recipe with Parmesan and parsley if desired.
200g snow peas, trimmed and stringed
150g green beans, cut in 3cm lengths
1 carrot, julienned
2 tablespoons butter
1/4 cup olive oil
1 red capsicum, diced
4 lettuce leaves, shredded
salt, to taste
- Bring a pot of salted water to a boil and add the snow peas, beans and carrot. Boil a couple of minutes then drain and rinse with cold water to stop the cooking process.
- Cook the tagliatelle in boiling salted water until al dente.
- While the tagliatelle is cooking, melt the butter with the oil in a frypan over medium heat. Add the capsicum and cook 2 minutes. Add the drained vegetables and toss well until they hot.
- Drain the pasta and place in a serving bowl then add the vegetables and shredded lettuce. Toss until lettuce is wilted. Add salt to taste and serve.
