Spinach Tagliatelle with Cream Sauce

Spinach tagliatelle was my favourite form of pasta growing up. I think it's best with a fairly simple sauce.

Serves: 4 

  • 300g spinach tagliatelle
  • 1 tablespoon olive oil
  • 1 onion, finely diced
  • 2 cloves garlic, crushed
  • 200g white mushrooms, sliced
  • 1/2 cup dry white wine
  • 60g cream cheese
  • 1/2 cup thickened cream
  • salt and pepper, to taste

  1. Cook the tagliatelle in boiling salted water until al dente, about 12 minutes.
  2. Meanwhile, make the sauce. Heat the oil in a frypan and saute the onion and garlic until soft. Add the mushrooms and wine and simmer 2 minutes. Remove from the heat, stir in the cream cheese and the cream then season with salt and pepper.
  3. Toss the tagliatelle with the sauce and serve.
