Apple Lemon Kugel

    My take on apple kugel uses lasagne sheets instead of the more usual egg pasta. It's like a fruit lasagne!

    Serves: 6 

    • 3 eggs
    • 60g unsalted butter, melted
    • 1/2 cup sugar
    • zest of 1 lemon
    • 1/4 teaspoon nutmeg
    • 3 large apples (I like Fuji), peeled and thinly sliced
    • 140g narrow lasagne sheets

    1. Preheat oven to 220 degrees C. Butter a shallow baking dish.
    2. Beat together the melted butter, eggs, half the sugar, lemon zest and nutmeg. Stir in the sliced apples.
    3. Cook the lasagne sheets in a large saucepan of boiling water until al dente, about 6 minutes. Drain. Layer the lasagne with the apple mixture as though making a lasagne. Sprinkle the top with the remaining sugar. Bake until golden, about 30 minutes.
