Healthy Chickpea and Carrot Soup

So healthy and so easy. Tinned chickpeas, carrot and premade hummus go into this simple chickpea soup recipe.

Serves: 4 

  • 1 tablespoon olive oil
  • 1 carrot, diced
  • 1 (400g) tin chickpeas, drained and rinsed
  • 3 cups vegetable stock
  • pepper, to taste
  • 1/2 cup premade hummus

Preparation:5min  ›  Cook:20min  ›  Ready in:25min 

  1. Heat the oil in a deep saucepan. Add carrot and chickpeas and saute 5 minutes. Add the stock and pepper and bring to a simmer.
  2. With a potato masher, mash about half of the chickpeas. Simmer 10 more minutes, until carrot is tender.
  3. Stir in hummus and serve.
