Roast Chicken Legs with Grapes

It's super easy to roast a few chicken legs for a hungry family - this recipe has the sweetness of red grapes.

Serves: 4 

  • 1 tablespoon olive oil
  • 4 skinless chicken legs
  • salt and pepper, to taste
  • 2 cups red grapes (seedless)
  • 1 tablespoon thyme
  • 4 onion shallots, peeled and quartered

  1. Preheat oven to 220 degrees C.
  2. Heat oil in an ovenproof frypan. Sprinkle chicken well with salt and pepper then brown on both sides, about 4 minutes a side.
  3. To the frypan, add the grapes, thyme and shallots. Transfer frypan to the oven and roast 20-25 minutes until chicken is done. Serve the chicken legs with the grapes spooned on top.
