Yummy orange shortbread type biscuits with an orange butter cream filling.

Serves: 8 

  • 250g butter, softened
  • grated rind of 1 small orange
  • 1/3 cup icing sugar
  • 1 1/2 cups plain flour
  • 1/2 cup cornflour
  • Filling
  • 113g butter, softened
  • 1 1/2 cups icing sugar
  • grated rind of 1 small orange
  • approximately 5 teaspoons orange juice

Preparation:30min  ›  Cook:12min  ›  Ready in:42min 

  1. Preheat oven to 180 degrees C and line bottom of baking trays with baking paper.
  2. With an electric mixer, beat butter, rind and icing sugar till light and fluffy. Stir in combined flours.
  3. Roll half heaped teaspoonfuls of mixture into balls and place 12 at a time on trays.
  4. Slightly flatten with a fork lightly coated with cornflour.
  5. Cook approximately 12 minutes or until lightly brown. Let cool.
  6. For the cream filling, with an electric mixer, beat the butter, rind, icing sugar and juice together until smooth.
  7. Spread evenly between biscuits (about 1 teaspoon per biscuit). Sandwich biscuits together.
  8. Will keep in an airtight container for 3 days. Will soften.
