Mango Chicken for Sandwiches

    A lovely chicken mango sandwich filling with a hint of heat from piri piri sauce. Lovely on crusty baguettes.

    Serves: 4 

    • 2 chicken breast fillets
    • 2 tablespoons piri piri sauce
    • 1 tablespoon mayonnaise
    • 1 heaped tablespoon mango chutney
    • 1 tablespoon plain yoghurt

    1. Marinate the chicken 1 hour in the piri piri sauce.
    2. Cook the chicken under the grill until cooked through and charring a little.
    3. Finely chop the chicken and mix with the mayonnaise, chutney and yoghurt. Serve right away, or cover and keep in the fridge until needed.
