Mango Chicken for Sandwiches
A lovely chicken mango sandwich filling with a hint of heat from piri piri sauce. Lovely on crusty baguettes.

2 chicken breast fillets
2 tablespoons piri piri sauce
1 tablespoon mayonnaise
1 heaped tablespoon mango chutney
1 tablespoon plain yoghurt
Extra time:1hour marinating ›
- Marinate the chicken 1 hour in the piri piri sauce.
- Cook the chicken under the grill until cooked through and charring a little.
- Finely chop the chicken and mix with the mayonnaise, chutney and yoghurt. Serve right away, or cover and keep in the fridge until needed.
