Warm Spinach and Pancetta Salad

    A warm spinach salad is a delightfully comforting side dish and quick to make especially if you buy bags of prewashed spinach leaves.

    Serves: 4 

    • 1/2 cup pancetta, diced
    • 1/2 cup red onion, sliced
    • 1/2 cup chicken stock
    • 1 tablespoon white wine vinegar
    • salt and pepper, to taste
    • 6 cups baby spinach leaves
    • 1/4 cup blue cheese, crumbled

    1. Heat a large saucepan over medium heat. Add the pancetta and cook 5 minutes, stirring.
    2. Add the onion and cook until soft, about 5 minutes. Add the stock, vinegar, salt and pepper and simmer 1 minute.
    3. Place the spinach in a salad bowl and pour over the warm dressing. Toss to coat so the spinach just wilts. Sprinkle with blue cheese.
