Salted Caramel Apples

    An oldie but a goodie! It's best to use organic apples as they have not generally been waxed, which can make it hard for the caramel to stick.

    Makes: 6 caramel apples

    • 8 tart organic apples
    • 2 tablespoons butter
    • 1 cup brown sugar, packed
    • 1/2 cup sweetened condensed milk
    • 1/2 cup golden syrup
    • 1/2 cup milk
    • 1/4 cup thickened cream
    • 1/4 teaspoon sea salt
    • 1 1/2 teaspoons vanilla

    1. Insert an ice block stick into each apple and set aside. Line a baking tray with wax paper.
    2. In a large saucepan over medium heat, combine butter, sugar, condensed milk, syrup, milk, cream and salt. Cook, stirring, until it begins to bubble.
    3. Cook gently about 20 minutes until it thickens and turns a toffee colour. This will happen at 115 degrees C if you have an instant read thermometer. Stir in the vanilla and remove from the heat.
    4. Dip the apples into the caramel, swirling to coat. Set them on the baking tray to harden in the fridge.
