Slice off the top 2cm of the apples, stem and all and reserve the tops. Core the apples with a corer then arrange on a baking pan. Divide the pecans between the apples, stuffing in to the hollowed out cores. Cover with the tops.
In a bowl, stir together the cider and sugar. Pour around the apples and add the cinnamon sticks to the liquid.
Cover with foil and bake 30 minutes. Remove the foil and bake 15 more minutes. Place in bowls and let cool a few minutes.
Pour the cider into a jug, straining out the cinnamon sticks. Add lemon juice then pour the cider over the apples and serve.
