Hoisin Chicken Stir Fry

    Quick and easy stir fry with fresh vegies and bottled hoisin sauce.

    Serves: 4 

    • 2 tablespoons canola oil
    • 1 kg chicken fillets, trimmed and sliced
    • 2 carrots, julienned
    • 1 red capsicum, sliced
    • 1 onion, sliced (I cut into quarters then halve the quarters lengthwise)
    • 200g snow peas, trimmed
    • 1 cup hoisin sauce (I use the select brand from Woolworths)
    • salt and pepper, to taste

    Preparation:25min  ›  Cook:20min  ›  Ready in:45min 

    1. Heat 1 tablespoon of the oil in a large wok or frypan, brown chicken then remove. Wipe pan.
    2. Add the other tablespoon of oil to wok or pan, add the vegetables and cook till tender.
    3. Return chicken to the pan with the sauce and salt and pepper.
    4. Bring to boil. Remove from heat.
    5. Serve with boiled or steamed rice.
