Walnut Apple Salad

    Adding raisins and walnuts to an apple salad gives you extra crunchiness and sweetness. I like to use pre-packaged greens to make this recipe even quicker and easier.

    Serves: 4 

    • 160g mixed salad greens
    • 1 apple, peeled, cored and sliced
    • 1/2 cup walnut halves
    • 1/2 cup raisins
    • 12 cherry tomatoes, halved
    • 2 green onions, thinly sliced
    • 2 carrots, peeled and grated
    • 1 avocado, peeled and diced
    • Dressing
    • 2 tablespoons balsamic vinegar
    • salt and pepper, to taste
    • 4 tablespoons extra virgin olive oil

    1. In a large salad bowl, combine greens, apple, walnuts, raisins, tomatoes, green onions, carrot and avocado.
    2. In a small bowl, mix the vinegar and salt until salt is dissolved. Whisk in olive oil and then season with pepper to taste.
    3. Toss the salad with the vinaigrette until lightly coated - you may not need all the dressing.
