Oven 'Fried' Chicken

    I love fried chicken but I made a healthier baked version with just as much flavour. Crunchy and lovely with much less fat.

    Serves: 4 

    • 1 cup plain flour
    • 1/2 cup polenta
    • 2 teaspoons garlic powder
    • 2 teaspoons onion powder
    • 2 teaspoons oregano
    • 2 teaspoons basil
    • 1 teaspoon salt
    • 1/2 teaspoon pepper
    • 12 chicken breast fillets

    1. Preheat oven to 200 degrees C and lightly oil a baking sheet.
    2. In a bowl, combine flour, polenta, garlic powder, onion powder, oregano, basil, salt and pepper and mix well.
    3. Add the chicken and toss to coat evenly. Place on the baking tray and lightly spray with cooking spray.
    4. Bake 30 minutes, until golden brown.
