Quick Thai Beef Salad

    This salad is equally good with leftover roast beef or shop-bought sliced roast beef. So easy to make, a great light meal.

    Serves: 4 

    • 1 cos lettuce, chopped
    • 2 cups shop-bought roast beef, sliced (or leftover roast beef)
    • 4 spring onions, chopped
    • 1/2 cup grated carrot
    • 1/2 cup cabbage, finely sliced
    • 1/2 cup chicken stock
    • 1/4 cup fresh coriander leaves
    • 1 tablespoon rice vinegar
    • 1 tablespoon sesame oil

    1. Divide the lettuce among four serving bowls. Top with pinches of roast beef, spring onions, carrot and cabbage.
    2. In a small bowl, whisk together chicken stock, coriander, vinegar and sesame oil. Pour over the salads and serve.
