Cashew Lime Chicken

    Once I started adding cashews to meals I didn't look back! They add a wonderful crunch to simple one pot meals.

    Serves: 4 

    • 2 teaspoons oil
    • 1 tablespoon fresh ginger, peeled and diced
    • 3 cloves garlic, diced
    • 600g chicken breast, cut into 2cm cubes
    • salt and pepper, to taste
    • 1 1/2 cups chicken stock
    • 1/4 cup hoisin sauce
    • 1 tablespoon lime juice
    • 1 teaspoon lime zest
    • 1 cup salted roasted cashews, roughly diced

    1. Heat the oil in a frypan over medium heat. Add ginger and garlic and cook one minute. Add chicken and cook, stirring, until browned, about five minutes. Sprinkle with salt and pepper.
    2. Add the stock, hoisin, lime juice and zest and bring to a simmer. Simmer gently until the sauce thickens, about 10 minutes. Sprinkle in the cashews and serve over rice.
