    Nice easy recipe, made in one bowl with a minimum of fuss. Makes the best moist muffins. The icing is really yummy too. My own recipe.

    Ingredients
    Makes: 20 large muffins

    • 3/4 cup white sugar
    • 3/4 cup brown sugar, packed
    • 113g butter, softened
    • 2 eggs
    • 1 cup thickened cream
    • 3 very ripe bananas, mashed
    • 1 teaspoon cinnamon
    • 1 teaspoon vanilla
    • 2 cups plain flour
    • 1/2 teaspoon salt
    • 1 teaspoon bicarb soda
    • For the icing
    • 125g cream cheese, softened
    • 60g butter, softened
    • 1 teaspoon vanilla
    • 2 teaspoons cinnamon
    • 1 1/2 cups icing sugar

    Directions

    1. Preheat oven to 180 degrees C. Fill muffin trays with large patty pans.
    2. With an electric mixer, beat the sugars, butter, eggs and cream together.
    3. Add the bananas, cinnamon and vanilla.
    4. Add the flour, salt and bicarb soda. Mix well and 3/4 fill each patty pan.
    5. Bake 15 - 20 minutes until nicely brown and a skewer comes out clean. Cool.
    6. Icing:

    7. With an electric mixer, beat cream cheese and butter until smooth. Beat in vanilla and cinnamon.
    8. Add icing sugar in 3 batches, beating till smooth.
    9. Pipe or spoon on muffins. Decorate with banana if desired.
