Tempura Flathead

Tempura Flathead

1 person made this

This is just a fancy way of saying battered fish but the mineral water really makes the batter light and crispy.

rolypoly South Australia, Australia

Serves: 4

  • 6 flathead fillets
  • 1/2 cup self-raising flour
  • 1/2 cup cornflour
  • 1/2 cup fizzy mineral water
  • 1 cup vegetable oil

Preparation:10min  ›  Cook:10min  ›  Ready in:20min

  1. Slice the flathead fillets in half lengthways. Mix the self-raising flour and the cornflour together in a bowl. Add mineral water and stir well. Coat the fish fillets with the batter.
  2. Heat the oil in a 20cm frypan. It is hot enough when a little drop of batter added sizzles.
  3. Fry the fillets, a few at a time, 2-3 minutes per side until lightly golden. Drain on paper towels.
