This is just a fancy way of saying battered fish but the mineral water really makes the batter light and crispy.
6 flathead fillets
1/2 cup self-raising flour
1/2 cup cornflour
1/2 cup fizzy mineral water
1 cup vegetable oil
- Slice the flathead fillets in half lengthways. Mix the self-raising flour and the cornflour together in a bowl. Add mineral water and stir well. Coat the fish fillets with the batter.
- Heat the oil in a 20cm frypan. It is hot enough when a little drop of batter added sizzles.
- Fry the fillets, a few at a time, 2-3 minutes per side until lightly golden. Drain on paper towels.
