King prawns are first deep fried then stir fried in a mixture of ginger, green onions and rice wine in this lovely yum cha dish.

Serves: 4 

  • 500g uncooked king prawns
  • oil, for deep frying
  • 6 spring onions, cut into large pieces
  • 6 slices fresh ginger
  • 2 tablespoons rice wine
  • 2 tablespoons soy sauce
  • 2 tablespoons white sugar
  • coriander, to garnish

Preparation:10min  ›  Cook:5min  ›  Ready in:15min 

  1. Heat oil in a deep saucepan or deep fryer, add prawns and deep fry until shell changes colour, about 1 minute. Drain on kitchen towels.
  2. Heat a little oil in a wok and add the spring onions, ginger and rice wine. Fry about one minute then add the prawns, soy sauce and sugar. Fry 2 more minutes.
