Bok Choy and Black Mushroom Stir Fry

    Dried black mushrooms are available from Chinese markets and they add a really unique flavour to this vegetarian stir fry.

    Serves: 2 

    • 12 dried black mushrooms, soaked
    • 4 bok choy
    • 3 teaspoons vegetable oil
    • 12 fresh mushrooms, sliced
    • salt, to taste
    • 1 teaspoon white sugar
    • 2 teaspoons cornflour mixed in 1/3 cup cold water

    1. In a saucepan of boiling water cook the black mushrooms until soft, drain well.
    2. Cut the bok choy into quarters and rinse away any dirt.
    3. Heat the oil in a wok and stir fry the bok choy 2-3 minutes. Add sliced mushrooms, black mushrooms and salt and sugar. Fry 5 more minutes. Add the cornflour/water mix and stir until boiling. Serve!
