Basic Roasted Red Capsicums

Roasted red capsicums are delightful in pasta sauce, on paella or just served on their own as an antipasto.

Serves: 8 

  • 6 red capsicums
  • 3 cloves garlic, peeled
  • 1 bunch thyme
  • 300ml extra virgin olive oil
  • salt and pepper, to taste

  1. On low to medium heat, slowly grill the capsicums, turning them constantly until blackened. Wrap them in plastic wrap and let cool.
  2. Preheat oven to 140 degrees C.
  3. Once cool, peel the capsicums, halve and remove seeds. Slice into strips.
  4. Place on a baking tray with the garlic cloves, thyme sprigs and 1/2 the oil. Bake 10 minutes then remove and place in a bowl.
  5. Stir in the remaining oil and season with salt and pepper. Chill at least 12 hours before serving.
