Quick Steak Sandwich

    The perfect lunch for two, so easy and hearty and satisfying. Top the sandwiches with relish instead of chutney if you like.

    Serves: 2 

    • 300g eye fillet steak
    • 2 tablespoons olive oil
    • 1 red onion, thinly sliced
    • 4 thick slices sourdough bread
    • handful spinach leaves
    • salt and pepper, to taste
    • chutney, if desired

    1. Slice the steak into 4 thin slices.
    2. Heat 1 tablespoon oil in a frypan and cook the onion until soft. Lower heat and cook onion about 10 more minutes until it's starting to get crunchy.
    3. Brush the sourdough slices with oil and toast a few minutes either side under the grill, until just browning.
    4. Heat a frypan with remaining oil and sear the steak slices about 30 seconds a side, seasoning with salt and pepper. Set aside. Add the spinach to the frypan to wilt.
    5. Top a slice of sourdough with the spinach, then two slices of steak, then half the onions. Add chutney if desired and top with another slice. Repeat with remaining ingredients.
