Savoury Chickpea Side Dish

    This is a side dish I prepare when cooking for large groups of people. Chickpeas are simmered in a tomato and onion sauce with spices.

    Serves: 6 

    • 1 cup dried chickpeas, soaked overnight
    • 30g butter
    • 2 onions, diced
    • 2 cloves garlic, crushed
    • 2 teaspoons fresh ginger, grated
    • 1/2 teaspoon turmeric
    • 1 teaspoon garam masala
    • 3 cups water
    • 2 tomatoes, diced
    • 1 green chilli, seeded and diced
    • 2 bay leaves
    • 2 tablespoons fresh coriander, chopped
    • 1 tablespoon lemon juice

    1. Melt the butter in a saucepan and add onions, garlic and ginger. Cook about 3 minutes or until onions are soft. Stir in turmeric and garam masala and cook another minute.
    2. Add water, tomatoes, chilli, bay leaves and chickpeas. Simmer 1 hour or until chickpeas are tender and cooked, stirring occasionally.
    3. Stir in coriander and lemon juice and serve.
