Spicy Tandoori Chicken Thighs

    If you like your chicken spicy you will love this recipe. Chicken thighs are flavoured with a lovely mix of spices and fried.

    Serves: 4 

    • 60g butter or ghee
    • 1/2 teaspoon black mustard seeds
    • 1 onion, diced
    • 1 clove garlic, crushed
    • 1 tablespoon fresh ginger, grated
    • 2 teaspoons curry powder
    • 1 teaspoon tandoori curry paste
    • 1 teaspoon ground cumin
    • 1/2 teaspoon garam masala
    • 1 teaspoon chilli powder
    • 1 tablespoon lemon juice
    • 1/4 cup water
    • 8 boneless, skinless chicken thighs

    1. Heat butter or ghee in a frying pan, add mustard seeds and fry about 1 minute until they start to pop.
    2. Add onion, garlic and ginger. Stir over medium heat about 3 minutes, or until onion has softened.
    3. Add curry powder, curry paste, cumin, garam masala and chilli powder. Stir another minute, then add lemon juice and water.
    4. Add chicken thighs and turn to coat evenly with the spices. Cover and cook over low heat about 50 minutes or until tender, turning occasionally. You may need to add a little more water.
