    A big slab of cake for all to enjoy.

    Ingredients
    Makes: 1 slab cake

    • 225g (8oz) butter
    • 4 eggs
    • 1 teaspoon vanilla essence
    • 2 cups sugar
    • 2 cups self-raising flour
    • 4 tablespoons custard powder
    • 1 cup milk
    • Cinnamon topping
    • 1 1/2 teaspoons ground cinnamon (I add much more)
    • 1/4 cup (55g) white sugar
    • 1/4 cup (35g) plain flour
    • 30g butter, chopped finely (I use a grater if butter is frozen)

    1. Mix the butter, eggs, vanilla essence and sugar together. Add the self-raising flour and custard powder then add the milk. Beat well for 10 minutes. Grease a baking dish as this makes a large slab of cake.
    2. Mix the cinnamon, sugar, flour and butter until it resembles bread crumbs, then sprinkle over the top of the cake. Bake for 45-50 minutes at 180 degrees C.
