Caramel Apple Cake

    Yummy apple cake with moist caramel syrup and vanilla drizzle.

    Makes: 1 cake

    • 2 1/2 cups sugar
    • 3 eggs
    • 1 1/2 cups canola oil
    • 3 cups plain flour
    • 2 teaspoons vanilla
    • 2 1/2 cups canned apples, drained and diced
    • 170g butter
    • 2 cups packed brown sugar
    • 1/4 cup milk
    • 1 cup icing sugar
    • 1/2 teaspoon vanilla
    • 1-2 tablespoons milk

    1. Lightly grease, flour and line bottom of 22cm springform tin and preheat oven to 180 degrees C.
    2. Cream together sugar, eggs and oil.
    3. Add flour and mix together until well blended.
    4. Add vanilla and diced apples.
    5. Spread into tin and bake for 45 to 60 minutes or until a skewer comes out clean.
    6. When cake is done, punch holes in it with a knife.
    7. Heat the butter, brown sugar and 1/4 cup milk in a saucepan over medium heat. Bring to a boil, stirring constantly. Let boil for about 2 minutes then pour over warm cake. Let cool.
    8. Mix icing sugar, vanilla and milk, 1 tablespoon at a time, until it is a consistency you can drizzle over the cake.
