In a bowl, sift together the flour, baking soda and salt.
With an electric mixer, cream together the butter and both sugars. Add in the vanilla essence and eggs, beating to combine.
Carefully add the flour mixture into the butter mixture, mixing just until combined.
Gently fold in the chocolate chips.
Roll into walnut sized balls.
Place 1 ball slightly shaped to cover the bottom and a bit of the sides of the patty pan. Add 1 large teaspoon of caramel into the middle and cover with another ball of the dough flattened to cover the top.
Bake for 18-20 minutes, until nicely brown.
You can also use a packet of cookie mix for this if preferred.
