    This recipe comes from an Indian friend of my Mother. It is a mild yet tasty meal that appeals to everyone. The chicken and rice can be made separately to accompany other dishes, but together they make a colourful, one bowl meal.

    Ingredients
    Serves: 4 

    • 2 large chicken breasts, sliced
    • 2 tablespoons oil
    • 1 teaspoon curry powder
    • 1 teaspoon finely chopped ginger
    • 1 teaspoon finely chopped garlic
    • 1 1/2 teaspoons salt
    • 1 1/2 teaspoons turmeric
    • 1/2 teaspoon garam masala
    • 50g butter
    • 1 cup white rice, rinsed and drained
    • 1 1/2 cups frozen mixed peas and corn
    • 2 teaspoons chicken stock powder
    • 1/2 teaspoon turmeric
    • 1/2 teaspoon finely chopped ginger
    • 1/2 teaspoon garam masala
    • 1/2 teaspoon curry powder
    • 1 onion, chopped
    • 2 cups hot water

    1. In a large bowl, mix together 2 tablespoons oil, 1 teaspoon curry powder, 1 teaspoon finely chopped ginger, 1 teaspoon finely chopped garlic, 1 1/2 teaspoons salt, 1 1/2 teaspoons turmeric and 1/2 teaspoon garam masala. Add chicken breast, coat with mixture and refrigerate for 1 1/2 hours.
    2. Cook chicken in a oiled frypan on medium-high heat until cooked through (approx 15 minutes). Cooked chicken can be kept in a foil-covered dish in a warm oven until rice is ready.
    3. In a large bowl mix together the peas and corn and the remaining measures of chicken stock powder, turmeric, ginger, garam masala, curry powder and hot water. Set aside.
    4. In a large pot, melt butter on a medium heat and add rice and onion. Stir continuously until rice is lightly browned. Add the mixed water and spices.
    5. Bring to a boil quickly, then simmer covered on low heat until the liquid is gone and the rice is soft (approx 20-25 minutes).
    6. Add cooked chicken to the rice and serve.

    Tip

    The chicken can also be baked in the oven for a healthier option. The breast meat can also be substituted for chicken thighs or chicken nibbles.
