Healthy Sweet Peanut Butter Balls

    This is my take on a healthy, protein-packed, energy-filled peanut butter ball. We all know nuts and seeds are nutritious, but getting them into your diet can be hard when eating them raw doesn't appeal. Here they add a lovely crunchy texture and compliment the strong peanut butter taste. This is a great low carb snack between meals or to satisfy an after dinner sweet tooth. Make sure you use an all natural peanut butter with no additives.

    Serves: 2 

    • 2 tablespoons pumpkin seeds
    • 2 tablespoons sunflower seeds
    • 1/4 cup peanut butter (100% peanuts)
    • 4 tablespoons almond flour
    • 1 tablespoon of ground flaxseed/linseed or almond flour
    • 12.5 grams (2 squares) dark chocolate
    • 1/2 teaspoon honey
    • shredded coconut, sesame seeds or almond flour for rolling

    1. Roughly chop the pumpkin seeds and sunflower seeds. Lightly spray a small frying pan with oil and add the chopped seeds. Lightly warm the seeds until they start to brown, do not burn. Remove from heat and pour the seeds into a small mixing bowl.
    2. Add to the bowl the peanut butter, almond flour and flaxseed or extra almond flour. Roughly chop the chocolate and add this to the bowl. Add the honey and mix together.
    3. Using a measuring spoon, measure out level tablespoon sized portions of the mixture and shape into balls with your fingers. Roll each one in coconut or almond flour and refrigerate or freeze.
