Pork Satay Kebabs

    This is a great satay recipe because it is prepared the day ahead, requiring only a quick finish under the grill or on the barbecue. Serve with shop-bought satay sauce or make your own.

    Serves: 4 

    • 2 pork fillets
    • 1 onion, grated
    • 2 teaspoons fresh ginger, grated
    • 2 teaspoons brown sugar
    • 1/2 teaspoon sambal oeleck
    • 1 teaspoon ground coriander
    • 1 tablespoon soy sauce
    • 1/2 teaspoon ground cumin
    • 2 tablespoons coconut cream

    1. Slice pork into long thin strips and thread on skewers, two to a skewer.
    2. Combine all other ingredients in a small bowl and mix well. Marinate the kebabs in this mixture in the fridge overnight.
    3. Grill or barbecue kebabs until golden brown. Serve with satay sauce.
