Mango Chicken

    Mango chicken has a few steps to it but is really simple to throw together and has a delightful flavour. Garnish with coriander leaves for a little colour.

    • 2 mangoes
    • 1 kg chicken thigh fillets
    • 2 cloves garlic, crushed
    • 1 tablespoon ginger, grated
    • 2 tablespoons ghee
    • 2 onions, finely diced
    • 1/2 teaspoon ground coriander
    • 1/2 teaspoon turmeric
    • 1/2 teaspoon cumin
    • 1/4 teaspoon ground ginger
    • 1/4 teaspoon ground cinnamon
    • 300ml cream
    • 2 tablespoons lime juice

    1. Puree the mangoes in a food processor and strain through a colander into a bowl. You need about 1 1/2 cups puree.
    2. Combine chicken, garlic and ginger in a bowl and marinate in the fridge at least 3 hours.
    3. Barbecue the chicken (or cook on a griddle pan) until done then slice into 2cm strips.
    4. Heat the ghee in a saucepan and brown the onions. Add all the spices and cook until fragrant.
    5. Add chicken, mango puree, cream and lime juice. Cook, stirring, until mixture thickens, about 10 minutes.
