Serves: 6

  • 250g packet milk arrowroot biscuits (or other sweet biscuits)
  • 2 cups Rice Bubbles(TM)
  • 125g butter
  • 1 (395g) tin condensed milk
  • 2 tablespoons cocoa
  • 185g packet Maltesers(TM), cut in half (I used a 280g bag - but that's just because I knew I'd eat them as I cooked!!)
  • 200g white chocolate

Preparation:25min  ›  Cook:5min  ›  Extra time:2hours chilling  ›  Ready in:2hours30min

  1. Line a slice tin with baking paper.
  2. Crush biscuits in a food processor.
  3. Pour biscuit crumbs into a large bowl along with the Rice Bubbles and 3/4 cup halved Maltesers.
  4. In a saucepan over medium heat, add butter, condensed milk and cocoa. Whisk until melted together and smooth. Cook for 1 minute.
  5. Pour over dry ingredients and mix until combined.
  6. Press firmly into tin.
  7. Break white chocolate into a bowl and heat in microwave in 30 second bursts, stirring each time until smooth. Pour over slice.
  8. Press remaining Maltesers into the chocolate.
  9. Please note that if you intend to refrigerate or freeze the slice for longer than 1 day, press the Maltesers into the chocolate with the cut side down. They will stay crunchy. Refrigerate/freeze until set.
  10. Tips: to keep your white chocolate glossy and stop it from cracking, add 1 tablespoon melted copha to the melted chocolate prior to pouring onto slice.
  11. Store in the fridge for up to 1 week.
