Persimmons are a very sweet fruit so this tart does not have any added sugar. Serve warm or cold with a dash of thickened cream.
Makes: 1 pie
1 premade pie shell
400g mashed persimmons
1 tin (400g) unsweetened condensed milk
1/2 teaspoon cinnamon
2 pinches ground ginger
- Preheat oven to 220 degrees C.
- In a mixing bowl combine persimmons, condensed milk, eggs, cinnamon, nutmeg, ginger and salt. Pour into the pie shell.
- Bake 10 minutes then reduce the oven heat to 180 degrees C and bake 40 more minutes until the filling is set. Let cool.
