Rinse the meat and pat dry. Place in a large heavy casserole dish and sprinkle with salt. Work the salt into the meat with your hands.
Add the chilli flakes and curry powder, a little at a time, rubbing into the meat. Add the spring onions and onion and knead in briefly. Cover and let stand 2 hours.
Do not add water. Place the casserole on the stove, cover and bring to a boil - the meat will give up a lot of water. Cook, stirring occasionally, 2-3 hours.
